This is the uppermost section of the gully. The hopper is a vital part of a P-trap gully, whereas, in a bottle-trap gully, this is a separate component that can be removed.
This is the lowest section of the gully, sitting lower than the outlet in the gully. The gully pot is where the water trap is formed, and any small pieces of debris that pass through the grate/grid are collected.
The water trap's design can vary depending on whether you have a P-trap or bottle-trap gully. A P-trap gully will always have a pocket of water to prevent gases from escaping, while a bottle-trap gully allows water that enters the hopper to flow to the outlet via the pot.
